Two summers ago I discovered one of my all time favorite summer drinks. I was house-sitting at my parents' in the 'burbs and had already breezed through the two bottles of wine they left me earlier in the week. After refilling the birdbath, feeling very proud and domestic-like, I went inside to reward myself with a drink. Except there was nothing in the house, but a bottle of Campari.
Unlike Jamie, I'm not a huuuggee fan of negronis or Campari and tonics, but my thirst overruled my preferences. Alas, there was no soda water to be found in the house either, but there were a couple of cans of San Pellegrino flavored sodas in the fridge. I grabbed a can of Pompelmo, poured it into a glass and added a splash of Campari and, viola, my drink of the summer was born! Not only was it a cinch to make, but it was deliciously sweet and refreshing. The Campari mixed with the sodas also create the best summery neon pink and tangerine hues that just scream for an instagram.
Pictured here are the Pompelmo and Clementina sodas with Campari, but I have also tried it with their Blood Orange flavor, which is delicious as well. The orangey hued cocktail is the Clementina with Campari. The clementine flavored soda is super sweet, so the Campari balances it well, but still creates a pretty sweet tasting drink. We garnished the Clementina with a wedge of lime. To balance the sweetness out, I highly suggest squeezing that lime wedge and plopping it right in the glass. The pink Pompelmo or grapefruit flavored soda with Campari is more bitter and refreshing, and my personal favorite. We garnished it with a cube of fresh grapefruit. So simple and so tasty. Next time I want to experiment with mixing Campari with other flavors like Limonata and Aranciata.
Simply pour the flavored soda of your choosing and top with Campari. It sounds weird, but it's delicious, I promise!
