Let me start off loud and proud with a very important disclaimer: I LOVE CARBS! I am in no way, shape, or form, giving up noodles of any kind. I heart pasta every day of the year! My current pregnancy situation has been a great excuse for carb-loading, but doesn't even have anything to do with the fact that I'm a pasta-phile through and through.
Okay, now that I've gotten that important message out, I'd like to admit that I'm curious about a number of recipes I've seen lately involving vegetable "noodles." My pregnancy has been a great time for allowing myself to indulge in all manner of pastas whenever I want (left-over pappardelle eaten straight from the fridge at midnight? sure)...but being pregnant and being mother to a growing toddler has also made me more conscious than ever about getting as many nutrients as possible out of every meal. I grew up in a meat-and-potatoes kind of family, and I still fall into the mindset that vegetables are only for side dishes. So these vegetable "noodle" recipes I keep seeing around have caught my eye...this might be a perfect way for a pasta-lover such as myself to give veggies center stage once in awhile. The way I see it, vegetable noodles aren't a replacement for noodle-noodles, but they do offer a new, interesting way to work veggies into your meal in a main-dish way. Like on evenings when I'm NOT stuffing pappardelle into my face. Recipes like this Crab Zucchini Pasta with Spicy Avocado Sauce started creeping onto my Pinterest page. And after some inquisitive Googling, this article in Bon Appetit mapped the whole thing out for me.
So I've come to the conclusion that it's time for me to pick myself up a spiralizer - you can get one here or here - and maybe a cookbook like Inspiralized, by Ali Maffucci, too, for more tips on turning vegetables into satisfying meals!
