It's supposed to be 75 degrees here in New York tomorrow and if that's not a reason to break out a mojito, then I don't know what is! April is the time of year when we bust out the flouncy dresses and cute sandals that have been taunting us from the back of the closet all winter. It's also the time when we realize it's a littttttllle too early to be wearing dresses and sandals and end up shivering on the way to brunch. So why not bust out a summery cocktail a little too early too?! These strawberry mojitos are a sweet and refreshing way to welcome the warm weather!
This mojito is made with fresh strawberries which appropriately starting peaking in the U.S. in April. (Their peak season ends in June.) In fact, the carton of organic strawberries I got this week were some of the biggest and juiciest I've had in a while. They practically begged me to make a cocktail out of them.
The recipe is a simple one, from Food and Wine magazine, that really lets the ingredients shine through. The key is getting the freshest batch of strawberries you can find!
(or as I like to call them after I've had a couple....strawjitos!)
- 2 lemon wedges
- 6-8 mint leaves, plus some for garnish
- 1-2 fresh strawberries, plus one half for garnish
- Ice cubes
- 2 ounces of aged rum (I used El Derado white rum)
- 3/4 ounce fresh lemon juice
- 1/2 ounce agave syrup
In a cocktail shaker, muddle the lemon, mint and strawberries. Add ice, rum, lemon juice and agave syrup. Shake well an strain into ice filled glass. Garnish with strawberry half and mint sprig. Makes one drink.
