This punch is my new favorite mocktail - delicious on its own and also perfect for spiking. We served it at Marisa's celestial baby shower, but I've served it at a few events since, and it's always a hit with ladies and gents alike. My inspiration for making it is Marisa's signature cocktail, the F. Scott Spritzgerald, which I know she longed for at time to time during her 8 months of pregnancy-induced sobriety. It's made primarily of grapefruit and elderflower (this time with non-alcoholic elderflower cordial, instead of our beloved St. Germain), with a little spritz to keep it light and a crisp cucumber garnish.

Belvoir Elderflower Cordial is a mocktail dream ingredient - it adds a syrupy, smooth, floral deliciousness interesting enough that you don't miss the alcohol. Or you add the alcohol on top of it, either gin or prosecco, both of which compliment this punch perfectly.
