It's the FIRST DAY OF SPRING! One of my top 5 favorite days of the year. Unfortunately, it's been snowing all day here in NYC...womp, womp. Regardless, a solstice is something to celebrate, and this is a perfect cocktail for the job. The Mother of Pearl, which I found in SAVEUR, is bright and refreshing - a definite departure from the warming cocktails of winter - but it's not quite a full-blown Spring explosion, with fruity, herbal, floweriness or such. It's a classic gin and tonic, one of my personal faves, but with a couple of celery additions (in the form of bitters, celery salt, and a snappy celery stalk garnish), which add a fresh-cut-grass kind of thing.
The Mother of Pearl is springy in a subtle way, like the way that hyacinths kind of tickle your nose, the way that grass looks poking through the remnants of snow, and way that the crisp morning air just feels more optimistic these days (this grey morning notwithstanding). And I love how the celery and fennel garnish looks like a fresh cut tulip stem in a vase of water.
