This is not a fancy recipe - but an easy summer salad to go with your next barbecue when you don't have many ingredients on hand, but the ingredients in your yard. My Grandma and parents have been making it forever and it's a summer staple in our house. No hamburger is complete without a heaping of this salad next to it.
While visiting my parents this week - I took advantage of their fresh garden and my dads expert salad making skills (those are his manly hands chopping, not mine pictured!). We picked fresh tomatoes from our garden and cucumbers from our neighbors garden - we have a nice sharing system worked out, wine included!
All you need is tomato, cucumber, mayonnaise and apple cider vinegar.
Peel the cucumbers, cut them in half and scoop out the some of the seeds. Chop the cucumbers and chop up the tomatoes. Toss the "tomats" with the "cukes".
Then add a scoop of mayo and a couple of splashes of vinegar. The amount you use is really to your taste and how much cucumber and tomatoes you have (some people like it saucier than others). I usually start with a small amount and add as I go until everything is coated. My mom mixes the mayo and vinegar together separately and then adds them, while my dad just tosses both directly on the salad.
Salt and pepper to taste, add some chives and you are set! You can also add onion for more bite, but since it hurts my stomach I always omit it.
