Pardon my tardiness on this Cheers post...I was so preoccupied with toasting my brother and his fiancee last night that I didn't get this cocktail up! Luckily this is a simple one, so you won't waste any time getting one mixed up for today instead.
This is a simple cocktail. So much so that the recipe is basically in the name: Campari and Tonic. It's so easy to make, and yet really complex and interesting in flavor, thanks to Campari, that strangely herbal, bitter aperitif with the punchy red color. Campari is an Italian classic, made since the 1860's (it was originally colored with a type of dye made of crushed cochineal insects!). In Italy, Campari Soda is pre-bottled and sold at markets. This has the same fresh bubbliness with the added flavor of tonic, which is a summer staple in my fridge.
I used about 2 oz of Campari and then topped the glass off with tonic - about 4-6 oz worth - but this isn't a cocktail about precise measurements. Adjust the ratio to your liking. This is a perfect summer vacation drink - bright and refreshing. The cocktail in these photos doesn't have a garnish, but it would be perfect with a slice of citrus.
