Our watermelon bonanza continues! We're topping it off with a couple of watermelon-based beverages that I served at my daughter Vivi's watermelon-themed first birthday party last weekend. First off is some simple watermelon lemonade. Any summer day could only be improved upon with a glass of this - it is summer incarnate: thirst quenching, bright, and just the right amount of sweet. I used one whole watermelon and a whole carton of lemonade, which filled up 24 jam jars, but you could adjust the amounts and ratio to your liking. There isn't any perfect measurement to adhere to. Relax - it's summer! Just pour to your liking.
For Vivi's party, I served the lemonade in a tub of ice, already poured into grab-able portions. Next to the tub I gave a couple of suggestions for how to spike it. Because let's face it, this refreshing drink is just asking to be spiked. If you were serving a mainly drinking crowd, you could leave the jars half full and let people mix drinks in the jars themselves. Because this was a kid party, I filled the lemonade jars to the top. So the winos among us mixed their drinks in watermelon seed cups.
And some people just popped a straw in the jar and sipped as is. Just to really drive the theme home, I also had a dispenser of watermelon and mint water. The flavor was subtle, but it made a pretty centerpiece.
